An oil that comes from different plant sources, mainly from the seeds, nuts, or fruits of plants, is called vegetable oil. It is extensively utilized in food preparation and cooking, as well as non-food uses like cosmetics and biofuels. Crushing and pressing the plant material to extract the oil is the first step in the production process; contaminants are then removed through refining. Vegetable oil is commonly derived from plants, such as olives, canola, palm, sunflower, and soybean oil.

Owing to its neutral flavor, high smoke point, and affordability, vegetable oil is a very adaptable and commonly chosen cooking medium in the culinary world. Due to its bland flavor, it works well in a variety of recipes, including deep-frying, baking, and salad dressings. Furthermore, the oil's high smoke point keeps it from degrading at high temperatures and releasing dangerous chemicals.

Although vegetable oil is already a common ingredient in modern diets, its high omega-6 fatty acid level has raised health concerns. The imbalance of fatty acids in the body can be caused by consuming too many omega-6 fatty acids without enough omega-3 fatty acids. This imbalance may aggravate inflammation and lead to other health problems.
