Agar: A Versatile Substance With Many Industrial Uses

Agar is a jelly-like substance extracted from red algae. Also known as agar-agar or kanten, it has been used for centuries in Asian cuisine and industry. Agar derives from the polysaccharides agarose and agaropectin found in the cell walls of certain species of algae. When melted and then cooled, it forms a gel.

Agar's gelling properties make it popular as a thickener, stabilizer, and texturizer in foods. It forms a stable gel at lower concentrations than animal-sourced gelatin. Unlike gelatin, agar gels do not melt when heated and re-cooling isn't required. This allows agar to be used for recipes involving both hot and cold ingredients. Common foods containing agar include jellies, desserts, confections, puddings, and vegetarian and vegan alternatives to gelatin items.
